Incredibly fruity and sweet!! Chiapas "Ambar" medium-roasted coffee is well balanced in aroma, flavor, and body with hints of dark chocolate, the sweetness of berries and caramels, and butter brought out by the roast. However, it has a smooth acidity characteristic of the high-grown coffees called "Altura" (high altitude). These coffees are cultivated 1,300+ meters above sea level and their cherries tend to be harder than the coffees cultivated in lower altitudes.
“Ambar” (Amber) is a very transparent, brilliant fossil resin found in Mesoamerica only in the northern and central highlands of Chiapas, where these amazing single-origin coffees grow. We found inspiration in this beautiful and legendary tree resin given its history, origin, and, color, just as our Chiapas "Ambar" Coffee!
Chiapas is the most southern state in Mexico bordering Guatemala. Its mountainous highlands, dense rainforest, pristine lakes, rivers, and national parks are dotted with Mayan archaeological sites i.e Palenque, Izapa, etc, and Spanish colonial towns.
The Coffees from Chiapas State are grown in the mountains of the southeastern-most corner of Mexico and are known for their high quality, marvelous aroma, and peculiar chocolatey and nutty taste with marked acidity from fruit flavor notes (which should not be confused with stomach upsetting acidity). Each cherry is hand-picked and ALL coffees in Mexico are traditionally grown, meaning that the coffee plants are grown under the shade trees simulating a cultivated forest! no machinery, equipment, or human harming chemicals are used.
Our farm is located in the municipality of Siltepec, Chiapas, however; for around 10 years, we have been working together with small farmers from Jaltenango, El Triunfo Reserve, San Cristobal de las Casas, and many other small municipalities that have come together and produce world top coffees. Tapachula Chiapas is our home city and has fantastic coffees cultivated at farms located in the region of "El Soconusco". The love and devotion Chiapanecans invest in their crops can be tasted in the rich full flavor of their coffee that has been recognized as one of the best coffees from the southern region of Mexico
Due to the geographical conditions influenced by its proximity to the equator, Chiapas coffee was also awarded the “Denomination of Origin (DO)” since it produces some of the very best and highest-grown Mexico and World coffees.
